Creamy Chicken and Vegetable Soup

Ingredients you need

Sadia Easy and Juicy Chicken Breast Small Cubes 450g
Sadia Mixed Vegetables with Corn 350g
Chicken stock 950ml
Light oil  2 tbsp
Butter  2 tbsp  
Garlic (finely chopped) 
Paprika powder  1 tsp 
Garlic powder  1 tbsp 
Dried zaatar 1 tbsp 
Heavy cream  ½ cup 
Full fat milk  1 cup
Cornstarch  3 tbsp  
Warm water  2 tbsp 
Onion (diced)  180g 
Baby spinach (chopped)  150g 
Salt and pepper to taste 
Lemon wedges and chopped parsley for garnish 

Cooking directions

  1. Prepare Stock:
    In a jug, dissolve a chicken stock cube in 950ml of warm water. Set aside. 
    In a small bowl, dissolve the cornstarch in 2 tbsp of warm water. Set aside. 
    In a large pot, heat the oil and butter. Add the onions and garlic and cook until translucent. 

  2. Prepare Chicken:
    Add the chicken cubes, paprika, garlic powder and zaatar.

  3. Assemble the Dish:
    Add the stock and mixed vegetables and let it come to the boil, turn it down and let it simmer for 20 minutes
    Add the cream, milk and cornstarch to thicken. 
    Add the spinach. Let it simmer for a further 10 minutes for flavors to develop. Adjust taste if needed with salt and pepper.
    Turn off the heat. Spoon into bowls and garnish with chopped parsley and a lemon wedge. 

  4. Serve:
    Serve with garlic bread.
