| Zaatar | 2 tsp |
| Cooking oil | 1 tbsp |
| Olive oil | 3 tbsp |
| Pomegranate seeds | 50g |
| Rocca | 120g |
| Blue cheese | 100g |
| Cucumber (cut into half slices) | 150g |
| Peaches (ripe, destoned, and sliced) | 2 |
| Walnuts | 80g |
| Honey | 2 tbsp |
| Cinnamon | ½ tsp |
| Pinch of salt | |
| Pomegranate molasses | 3 tbsp |
| Red vinegar | 1 ½ tbsp |
| Extra virgin olive oil | 4 tbsp |
| Salt and pepper to taste |
Make the Honey Walnuts:
Preheat the air fryer to 180°C.
In a bowl mix the walnuts with honey, cinnamon and salt. Place in the air fryer and cook for 5 minutes.
Air-Fry Chicken:
Coat the chicken in the cooking oil, zataar, salt and pepper.
Cook in an air fryer at 180°C for 15–20 minutes until cooked through.
Assemble Dish:
In a large plate arrange the rocca, sliced cucumber, chicken pieces, peach slices and blue cheese. Sprinkle with pomegranate seeds.
Once the honey walnuts have cooled, break them up slightly and sprinkle on the salad.
