| Light oil | 2 tbsp |
| Cumin powder | 1 tsp |
| Turmeric powder | ½ tsp |
| Salt and pepper | |
| Spring onions stems (chopped) | 50g |
| Onion (diced) | 120g |
| Tomatoes (chopped) | 180g |
| Large egg | 1 |
| Mozzarella (shredded) | 160g |
| Parsley (chopped) | 2 tbsp |
| Flour | 1 tbsp |
| Water | 3 tbsp |
| Lemon slices and green chiies to garnish | |
| Spring roll or Mutabbaq sheets | 10 |
Fry Chicken:
In a frying pan with some oil, cook the onion until translucent.
Add the chicken and cook until the juices reduce.
Add the cumin, turmeric and salt and pepper, stir and set aside.
Prepare Mix:
In a bowl, mix the spring onion stems, chopped tomato, egg, chopped parsley, mozzarella.
Add the cooked chicken mix.
In a small bowl mix the flour with water. Set aside
Assemble Dish:
On a clean lightly dusted surface, lay a sheet of spring roll paper.
Add a heaped tablespoon of the mix in the middle of the sheet.
Fold the sides and seal with the flour paste, using a brush.
Do all 10 mutabbaq and brush them with the remaining oil.
Place the muttabaq in an air fryer set to 200°C for 15 minutes, turning them half way through.
Plate the mutabbaq on a platter and garnish with lemon slices and chilies.
