| Vegetable oil | 2½ tbsp |
| Onions (sliced) | 150g |
| Mixed bell peppers (julienned) | 150g |
| Carrots (julienned) | 240g |
| Garlic-ginger paste | 3 tsp |
| Soy sauce | 3 tbsp |
| Oyster sauce | 3 tbsp |
| Sesame oil | 1½ tsp |
| Black pepper | 1½ tsp |
| Spring onions, sesame seeds and coriander to garnish | |
| Soy sauce (for marinate) | 3 tbsp |
| Sesame oil (for marinate) | 1½ |
| Corn flour (for marinate) | 1¼ |
| Coney or brown sugar (for marinate) | 1½ |
Marinate Chicken:
Mix the soy sauce, sesame oil, corn flour, and coney or brown sugar. Marinate the chicken for 15-20 mins
Fry Chicken:
Add half the oil to a large frying pan or wok.
Add the marinated chicken cubes to the oil and toss until browned and cooked. Remove from the pan and set aside.
Assemble Dish:
Return the chicken to the pan and toss all together. Make sure the vegetables are not overcooked and are a little al dente.
Add the frozen sweetcorn.
Adjust the to taste.
Garnish with spring onions, sesame seeds and coriander.
