Red chili powder 1 to 1½ tsp
Black pepper 1 tsp
Salt 1½ tsp
Baking soda ¼ tsp
Small Egg, whisked 1
Cornstarch ¼ cup + 1 tbsp
All-purpose flour 2 tbsp
Water 1 tbsp
Oil for frying
Water ¼ cup
Oil ¼ cup
Cumin seeds 1½ tsp
Garlic, thinly sliced 2 cloves
Mild green chili peppers, halved, deseeded if desired 2-3
Whole dried red chili peppers 5
Garlic paste 1 tsp
Ginger paste 1 tsp
Fresh curry leaves 3 sprigs
Chili garlic sauce ⅓ cup
Plain yogurt, whisked ⅓ cup
Heaping Sea salt ⅓ tsp
Lemon wedges for serving

Cooking directions
