| Bamboo skewers (soak for 20 mins in water to prevent burning) | 12-15 |
| Pitted dates (about 10) | 120g (about 10) |
| Hot water | 100ml |
| Gochujang (Korean chili paste) | 2 tbsp |
| Honey | 1 tbsp |
| Soy sauce | 2 tbsp |
| Rice vinegar (or apple cider vinegar) | 1 tbsp |
| Sesame oil | 1 tsp |
| Garlic cloves (minced) | 2 cloves |
| Ginger (grated) | 1 tsp |
| Spring onions, sesame seeds and crushed chili flakes to garnish | |
| Unsalted butter | 50g |
| Salt | 1 tsp |
| Smoked paprika | ½ tsp |
Air-Fry Chicken:
Heat the air fryer to 180°C and cook the chicken for 15–18 minutes. Cook in batches.
Let it rest for 5 minutes to cool down so the chicken can be skewered.
Prepare Sticky Korean Date Glaze:
In a blender, blend the dates with hot water until smooth.
In a small sauce pan, add the date mix, gochujang, honey, soy sauce, rice vinegar, sesame oil and brown sugar.
Simmer for 3–5 minutes over a low heat and stir until thickened.
Prepare Chicken:
Thread the chicken onto the skewers, 3–4 pieces.
Brush the cooked chicken in the date glaze until fully coated.
Pan-grill the skewers for 3 minutes per side, brushing with the glaze for a caramelized finish.
Drizzle extra glaze over the skewers, sprinkle sesame seeds, spring onions and chili flakes.
Prepare Corn:
Boil the corn until tender, 8–10 minutes.
Melt the butter with paprika and brush the drained corn.
Sprinkle with salt.
Serve:
Serve on a large platter with corn on the cob and crinkle cut fries.
